I loove leftovers. And bolognese is one of those that gets better the more you reheat it. Great for comforting work lunches plus you can basically put whatever you want in your bol. I tend to make bolognese when I have lots of veg in the fridge and am not sure what to do with it. I tend to follow these steps: - start with sizzling lots of red onion in coconut oil - add all your chunky chopped veg (this time I used carrots red peepers and mushrooms) and your mince (I use #Quorn mince) let it all cook together a few minutes - then it's spice time! I always add herbed salt and lots of pepper. Then I mix it up with smoked paprika cinnamon nutmeg turmeric and basil. Put a few shakes of each and stir well so it gets on all the veg - empty a can of chopped tomatoes in there then add your greens (I used peas spinach and kale) and let it all simmer down so the sauce gets a bit thicker.
